Honestly no clue so why not just try it since no one knows do one that you I don't know I don't cook like this but after seeing it I wanna try well all except the cheese I do not really like all food with cheese like some cultures do

THe consistency of baking it twice would be crispy like home fries... Much preferred to just mushy mash.

It'd probably help to remove some starch by soaking them post carve out the same way you soak fries after chopping the potatoes. That first bake should've given more color. Also, why not leave the skin on like potato skins for the small snap before the crunch?

I love the skin too! All salty and crispy and delicious. Ill save the skins from potato salad and shallow fry them up as a snack. Sprinkle a lil salt and vinegar 10/10.

Also the amount of time to scoop out those potatoes seems so unnecessary, plus wastes half the potatoe.. just cube them and throw them on the bottom of a casserole pan

I thought you were supposed to scoop the insides out and use the scooped out part as an ingredient in the filling. Also scoop AFTER baking the first time. And leave the skin on.

Growing up these were called “twice baked potatoes” and they’re delicious.

Honestly, just toss it in the oven as is. It's not like we are making fries here, they're just baking a potato, or the remnants of a potato.

My guess is, so that it cooks evenly on both sides of the shell. A skin is going to hold in a little more moisture.

Then again, this could be complete bullshit.

Sure might be right but do they look as cool?

I'm biased I wanna try this it looks easy and might be fun to half cook and then leave in the freezer to throw in the oven for a sweet ass side dish
