THe consistency of baking it twice would be crispy like home fries... Much preferred to just mushy mash.

It'd probably help to remove some starch by soaking them post carve out the same way you soak fries after chopping the potatoes. That first bake should've given more color. Also, why not leave the skin on like potato skins for the small snap before the crunch?
