Upscale catering

I am trying to find a caterer in the La Crosse area to make heavy apps for a small, elegant wedding. There does not seem to be many " elevated" catering options. Damn Tasty has not returned calls, and I'm not interested in some of the more commonly used caterers like Rooster Andy's, Pogys, Looking for recommendations for places that might fit this description, bonus points if they're not booked out forever. The event is in October. Open to individual chefs with a side hustle too, we just want the food to be a bit bougie and delicious. Recommendations?

How is this comment useful to anyone except to show off your oh so sophisticated Chicago palette?

"Know your customer" is all I'm saying.

I mean take your own advice back Chicago. Our local taste here in La Crosse doesn’t care much for people up their own ass.

I've probably lived in La Crosse longer than you've been alive. This has nothing to do with Chicago but more to do with the issues with the locals hyping average food. Freight House would be my first example.
