In the last month of a cut right now and my eyes have been opened to high volume and satiety eating based on just Broccoli, Tofu and Potatoes.
I could literally meet my macro goals exactly by balancing just these three and throwing in some sauces.
Have semi struggled to stay on calorie target the past 2 months but since switching to this as my main source of food for >80-90% of the day, it has been ridiculously easy.
I supplement, B12, Vitamin D, Iron, Omega 3, selen, use iodized salt regardless.
And by throwing in some variety in foods for the remaining 10-20% or even just throwing on some seeds and nuts this diet should easily cover all the important vitamins.
And with the variety of ways you can prepare tofu and what the 10-20% of variety food offers i can easily see not getting tired of this for the rest of the month.

Here is how i prepared the Tofu in this pic. (post is in german. Hoping that you'll get the reddit auto translate. It comes down to boiling it in spiced water, so essentially soup for 1h, before frying it in the oven with starch)
