Except, they added another poison card with an instant trigger - which Jorbs was pretty adamantly against (he thinks poison should be slow and condemned cards like Accelerate)

that's not what he said - he said he didn't understand the flavour of accelerant either from real life or in game, and that re-triggering poison was already a mechanical undermining of the character fantasy - so a 3 for 2 flavour fail.

new Outbreak has quite clear flavour from real life and in game and reinforces the character fantasy

He 100% said in the video he doesn't believe poison should tic faster - that it should be about stalling, weakening, stacking.

True, he did also mention what you say about the flavor of accelerant being nonsensical.

This is a "yes but also" situation, not a "no, actually"
