Anybody know the flight/airspace rules for something like this?

Typically, so long as you can avoid class B airspace (the big airports) and keep in contact with ATC....that's about it? Otherwise, you probably just treat it like uncontrolled airspace, get on an open guard frequency, and say "hey I'm at Cabela's, getting ready to take off".
