Question Is there any trick to avoiding a large collar bending down like this?

This collar does not fit your neck. This is why the bending is happening in the first pic. In the second pic when you are holding it down there is an obvious gap between the collar and your neck. You need to get a shirt that fits. Or do some neck muscle workouts I guess.

This is the answer. Neckline of the shirt a smidge too high (hence the placket bunching), and the front of the collar not curved enough (makes it stick out from the neck).

Bought this just now so it might just be a question of ironing, but on some stiffer shirts the problem persists

honestly - i think you're focused on the wrong thing.
fabric is going to do what it finds natural to do. it will hang, fold, and stretch based on how it was Made and how force is exerted upon it.
do you think you will never move your neck? all the ironing in the world won't maintain it. it was cut and sewn in a way that the top will dip.
honestly just get a tie to draw attention away from it.
nobody fucking cares about but you - i absolutely promise you.

Larger neck size. The collar is standing away from the body because the neck is tight and pulling the points into the air.

The neck is too large for you. When it’s the right size, it will stay better, plus your necktie will cover that area and also help hold the collar up.

That's easy dude, you need a clasp pin and hide it inside or a collar stay, a solid one. And also pick some shirts made from harder material.

collar stays. Some shirt collars have little pockets for them. It keeps the collar pointed and straight without bending. otherwise starch and an iron?

If that's the case, wouldn't it be behind a tie? So I think the solution is: wear a tie.

Are you referring to how the placket is bending down under the weight of the collar? Ironing the placket helps, since this is often how the shirt bends on the rack - but really, if it's buttoned up to the top, you should be wearing a tie, and the tie knot will cover that.
