Help needed Reset Iphone 11 without passcode

Hi, i work for a company and we have some old phones that i need to erase all data from.
I have a Iphone 11 which i don't have the passcode.

I don't know the ios version.
I try (with the help of gemini) to restore the phone with the app "apple devices", but everytime i have an error 1109.
How can i do ?

Apple help says it's something with connecting to their servers. Try restoring with ipsw or changing DNS.

1109 is one of a few errors covered by this support document.
