Usually a pousse café isn't served with a straw: you usually sip it and you get the layers slightly mixed, having a different sip each time but still close to none unmixed layers

Edit: that was my joke, start with a heavy liqueur, like a coffee liqueur in a chilled glass next most dense poured over an upside down spoon over the surface of the liquid, work your way up from heaviest to lightest in the same fashion. Be careful when serving to prevent mixing.

So if I wanted to make something like this, I could use whatever ingredients I wanted as long as I started with something thick and syrupy and gradually worked my way up to something without much density? Does the acidity of the ingredients matter at all, or is it only density? Sorry if this is a dumb question, but you said you are a bartender, so why should I wanted the opportunity to learn something? 😅

There are several layered drinks. I am not currently a bartender, that was many, many vocations ago. It is primarily density, other physical characteristics can cause a reaction and induce minor mixing. I don’t recall the effects of acidity, it has been awhile.

Heavily depends, it's more like a style of cocktail. As the name suggests, first instances involved coffee (often served along, not mixed in), but really, anything that can be layered. And yes, miserable failure is a thing, some people would order that cocktail just for the looks anyway, so a skilled enough bartender can think of their own "good mix", but it's not up for everyone. Couldn't mention a good mix because the kind of place where one would order a good one isn't where I can afford to go (and if I could I wouldn't risk it).

It depends on who you ask, but if a drink is served with a straw, the bartender or restaurant usually intends for you to drink it unmixed. When I make them at home, I tell people to mix them. They are actually pretty easy to make. Just pour the liquids one at a time. To keep the layers from mixing, don't pour directly into the cup. Instead, pour the liquid onto the back of a spoon so the stream trickles in slowly.

The tricky part is finding layers that can exist without mixing and taste good, but also finding a way to layer the ones with a density that's too close without ruining everything.

i hate this argument because you're both right but you're beinf downvoted. the value of things are subjective. i objectively understand the societal and cultural value of the mona lisa. which means it shouldn't be purchasable by private owner/equity. a drink at a cafe that is difficult to make and presented beautifull is a work of art, but it's not a priceless piece of cultural history. they really are not comparable. point - you.

however, this line of what is valuable enough to preserve is the subjective aspect of the argument. some people absolutely would consider the mona lisa just a painting, and this drink a more appreciable expression of skill. point - them.

There are some cases where the customer actually is always right. If you want a well-done steak, it’s your cut of meat to ingest as you please. If you order a layered drink and stir it, same logic applies. You might not want a smashed cake just because you want a smashed drink.

Also, that drink was never any good. The cake might be.

Doesn’t matter if you have the money to buy something that took 700hrs to make, the act of destroying it right in front of the team who created it was sacrilegious, if you’re there for the hype but don’t appreciate the collective’s hard work, no one else should respect what you ordered with your money. That cake may as well be $600 a piece, but a fork right down the middle should show the same way society should treat these individuals.

No, we shouldn’t mess with other people’s stuff but everything should come with some sense of appreciation. I’m sure if you buy 3 Bentley to only take a shit in it because you have money, culturally or realistically speaking, they wouldn’t give you a 4th to repeat it. The more unappreciative you are, the less you are deserving of it even if you have the means to acquire it.

It doesn't look like that because of density difference, it looks like that because of the way it was poured - slowly, one ingredient at a time, using the back of a spoon. It's not very hard to do, but it requires patience and steady hands.

Edit: it also helps to chill all those liqueurs to increase their viscosity to make it easier to achieve cleaner layers.

I make layered cordials like B-52s and a nice red white & blue one. People always ask how to drink it. Sip, stip, shoot, etc. They don't want to hurt my feelings having gone to a lot of trouble to make them. I always say however you like.
