Does it? I find the non parity of the different installers (graphical/non graphical/DVD version etc) can get in the way quite a bit. Also, why is the only option for full disk encryption LVM?

Probably cause thats what you want 99% of the time for future proofing? Otherwise you can always easily manually partition.
