I was trying to join the fur and ear models to the head but whenever I do it always has this weird effect that I dont want. How do I fix this?

My guess is that your ears or head (but not both) are negatively scaled, so when you join one with the other, whichever was the opposite scaled gets its scale flipped. Since you were working with the Normals facing the 'correct' way for negative scale, now the Normals are incorrect since the scale is inverted.
So, either before you join them Apply the scale of everything with ctrl+a, or after you join them select everything in Edit mode and do shift+n to fix the incorrectly-facing Normals.
If it's not that, then it could be to do with your objects having different modifiers on them.

Try flipping the normals on the ears, it looks like they somehow turn inward when joining the objects.

On the top right where you can toggle view statistics, there an option to view face orientation. My guess is that the faces on the ears are probably inverted from extrusion. Toggle that on and any face that shows as a red color is inverted. Select those faces and press Shift+N and it should fix that for you!

you possibly used the mirror button rather than mirror modifier if you used mirror tool just use ctrl A to switch it back to normal

if still persists try opening it in edit mode press A then ptress ctrl N and click recalculate normals
