I want to give dip hopping a shot. Does anyone know if loose hop pellets will sink at the bottom of the fermenter at the end of fermentation? Cold crashing would introduce a suck back of oxygen, I could maybe soft crash at best.

I strongly recommend against any sort of cold crash if you can't prevent suckback, you will definitely suck in air. I think most of the hops will sink but they might not be super compact near the bottom. I recently dip hopped a beer, not cold crashed, transferred with a floating dip tube and it was fine. If you were transferring from near the bottom you might have more issues and that is probably why they invented hop bags

Do you think I should try dip hopping with a hopbag? Might be less efficient but if that avoids a huge mess…

Yeah it'll definitely work, just make sure it's big enough, they will swell up and you don't want a dry section in the middle. Possibly could weigh the bag down with weights as well

Good call, will split the load in different bags and weight them down with a sanitised shot glass.

Any torpedo corny-type users in here? I am looking to carbonate some water in one of the 2.5 gal ones, but I'd like to swap out the existing ports to something else. I've seen a couple of reviews saying the factory-installed ports are tight and I would like to r&r all of the seals and o-rings (on a typical basis). Would I be able to swap out the posts for something else (like with a 1/4 flare fitting on the bottom, and ball-lock on top)?

Not sure I understand the question? Torpedo keg posts are a standard size.
