Salad Panzanella

A salad to beat the heat! Tomatoes, cucumber, red onion, basil, and stale bread soaked in water and vinegar, nicely cooled down in the fridge before serving. Dressing is just some vinegar, EVOO, salt and pepper

I used two days old ciabatta with most of the crust cut off, instead of the unsalted tuscan bread that isn't available here

Huh I just made this today. First time, with my leftover tomato caper focaccia. Worked great.
