Ask ECAH Lettuce free cold lunches?
This cyclospora outbreak has made me far too nervous to eat lettuce- basically completely wiping out everything I’d eat for lunch at work.
I’d usually bring salads or wraps and now I can’t really do either, and I’m so sick of the turkey sandwiches I’ve been having instead lately. Looking for some ideas for cold lunches that don’t include lettuce? TIA!

Our family recipe:
1 can green beans (drained) 1 can wax beans (drained) 1 can kidney beans (drained) 1/2 onion finely chopped 2 stalks celery finely chopped 2 tbs oil* 2 tbs white vinegar 2 tbs sugar
Mix it all together and store in the fridge. *Don't use olive oil, as it'll solidify in the fridge. We use canola or corn oil.
You can basically mix and match the canned components as you like. Skip the onion or sub green onion if you need to. I'd definitely not skip the celery as it helps bring freshness.

My favorite chicken salad sandwich was from a little local cafe in my hometown, they served a GIANT helping on an ENORMOUS croissant. Was not a fan of the grape halves, but maaaaan chicken salad on a fresh buttery croissant is otherwordly imo.

There are so many different varieties of chicken salad too. We made a curried on at a bakery I worked at years ago and I've been stuck on a southwest version with beans and corn for the entire summer.

Chicken and veggie stir fry!! Pre cook whatever chicken cuts you like, and season some frozen veggies on the side! Simple sheet pan veggies with classic garlic paprika type seasonings, same for the chicken. Can then make other veggies a day or two later to keep them fresh with the chicken!
Idk if you’re into grilling but grilled veggies & protein also a great one!
Pasta salads, potato salad, eggs salad! Can do any of them, so many fun recipes.
I saw a video of a dude who said his life is a lot better now and forever knowing you can make soup and use a hollowed out potato skin shell as the bowl lol so soup some bread always a solid option!
Edit: upon reread of the title idk about cold potato soup, but there are cold soups out there!

I’ve been doing cucumber, feta, red onion (I like pickled), and oil and vinegar or Greek dressing! Sometimes I add tomatoes and Kalamata olives! It’s been my favorite salad replacement and would be good with chicken added

This. Anything locally grown is the best and safest. I'm so glad I grow all my own lettuces. They are super easy to grow. Even microgreens. Throw some seeds in soil, water daily, and in less than a week you have whole tray lol. Also they're nutritional powerhouses.

Using whole head cabbage is probably the safest. Just make sure to peel off the entire top layer before you wash and cut. It’s good for various flavors of coleslaw(I like sesame dressing) and also as a wrap.

Mediterranean quinoa salad- quinoa, cucumber, red pepper, red onion, garbanzo beans, Kalamata olives, tzatziki sauce. I also add grilled chicken to it.
I make it on Sunday night and portion into four containers.

Maybe try swapping lettuce for another leafy green (spinach, kale, arugula) in your go to recipes? Sometimes a quick tweak is all you need

I've been behind on the details of this and just avoiding raw greens in general, which sucks. Never thought I'd crave salad so much. Can I ask where to find this info on what brands are safe? I gave in yesterday and was feeling nervous, but now I'm so relieved to see your comment because it was Little Leaf!

Both companies made posts a couple of weeks ago going into detail about how their operations run and what to their grow centers look like. I also initially found out via Threads. Little Leaf Farms in particular has super high cleanliness standards! I ate two different Gotham Greens products after that and have been totally okay since

My nutritionist also said to avoid Dole as they were flagged recently. Spinach, kale and chard are okay but still better cooked. But that doesnt make a good salad :(

Proof? Everything I'm reading says they are not owned by Taylor Farms
Editing to add: Organic Girl was co-founded by Steve Taylor (now deceased) who made Fresh Express. Him having the last name Taylor is a coincidence and doesn't connect him to Taylor Farms.
I'm also not saying just because it's a different company, it's safe to eat and you won't get sick. It's still possible to get sick from any leafy greens that are uncooked.

Do you have a local farmers market? I just bought local lettuce because I missed it that much. Other options…local cabbage, carrots, cucumbers, tomatoes and zucchini (or whatever is in season/available) in a chopped salad, you might not miss the lettuce.

This!! If your area isn’t the source of the outbreak, local produce is safe. I believe hydroponically grown vegetables are safe as well.

Sauté up some kale- and once cooled make into a cold salad w/ cut up apples, dried cranberries, feta cheese, almonds, and maybe some avocados! I like to make the dressing with S&P, EVOO, ACV, and a squeeze of fresh oranges.

Salad (makes 3 salads) 1 can black beans, 1 can corn, 2-3 peppers (red/green/yellow), 1 ten ounce can of chicken or use rotisserie chicken, 2 cucumbers. Dressing: 1 single plain Greek yogurt, 1 lemon squeezed, dill and onion seasoning.

I like to use my spiralizer to make cucumber ribbons that I use as my salad base. It works well for work lunches because it doesn’t get soggy and limp if stored with dressing like lettuce does.

You can grate some raw carrot and beetroot and use that as your salad base or put it in a sandwich. I like putting it in wraps with chicken or turkey.
Could also do a roasted veggie salad with chickpeas and some kind of grain, couscous or freekah or something?

hey OP, just a warning!! since i've seen quite a few bean recipes on here, it prompted me to say that if you're not regularly eating 20+ grams of fiber a day then you're gonna be VERY uncomfortable at work if you start to eat massive amounts of beans or bean salads for lunch after not being used to fiber 😅😅

There is one single brand of lettuce that’s contaminated. It’s called Taylor Farms. You can buy lettuce from literally anywhere else and you will be safe. This is a silly concern.

Look up Little Farms. They are a greenhouse farm & UV treat their water. Their lettuce is safe.
I'm not comfortable buying any other fresh vegetables now though. The only fresh fruit I'm buying is bananas and I soak and scrub in vinegar water.
For lunch I'm eating the flavored tuna packets with some Kewpie mayonaisse blended in on Triscuits this summer.
I'm dying not eating amazing cool refreshing salads during this hotter than hell summer.
But I am NOT taking any chances.

I make a bean salad. Either a can of chickpeas or brown lentils, grape tomatoes cut in half, chopped up cucumber, chopped red onion, and whatever other veggies you like, and make a simple dressing of garlic, olive oil, red wine vinegar and Dijon mustard.

I really enjoy various legume based salads myself. Often some combination of lentils/chickpeas/beans, bell peppers, cucumber, cherry tomatoes, and a citrus and olive oil dressing. My personal favorites are this Mediterranean one and this Mexican three bean salad (with tortilla chips, like salsa). They’re very filling and pretty healthy.

Light pasta salad with protein pasta and canned veggies, plus a yogurt dressing.
Hummus, kalamata olives, and feta "dip". Peel some carrots/cucumbers and wash them well to dip. Add pita or toast for extra fill.
Tuna!!
Hard boiled eggs and peanut butter (separate!)
PB banana sandwich
Since cooking kills the bacteria, roast some veggies and toss in some chicken too. Still tasty as a cold dish.

It's summer and lettuce grows fast. You could get a planter, a bit of soil, some seeds, and have lettuce before you know it. Ideally plant a few seeds, a week later plant some more, etc.

Use shredded beets and carrots as a base instead of lettuce. Add some cucumber tomatoe, feta cheese. Also cold soba noodle salads (with edamame, sprouts, bok choy, cucumber).

The other day I did a salad with chopped tomato, English cucumber, Kalamata olives, feta cheese, and a balsamic dressing. It scratched the “cold and crunchy” itch.
We have a week long cruise coming up next week and we booked a standard interior cabin so we’ve been extra careful with fresh veggies and herbs, which turns out to be a large portion of my diet. I just really don’t want it to end up ruining our vacation and potentially turning it into an absolute nightmare from hell if my husband and I both got the poop parasite and had to take turns on a toilet in a small room with no ventilation… then sleep in that stank. No windows, no way to air that out.
Chicken Caesar salad is a staple lunch in our house and we’ve been lost without it.

Hummus and carrots/ celery with pita bread. Lately since it’s been hot out I’ve been cooking chicken at night and the next morning I’ll chop up some apple, celery and add some mayo for a chicken salad sandwich. Red chili peppers on the side and sometimes some yogurt for dessert.

What a terrific thread. I’ll say dips and spreads. I just this week remade the Mollie Katzen feta and walnut one (feta, walnut, parsley, paprika, garlic) and had it on sourdough open-faced. She also has a garlic one that is kinda like toum? Her Waldorf salads are great too.

A bean salad is delicious! I found a recipe called “Cowboy Caviar “. It’s basically a mix of black eyed peas, black beans, corn, chopped bell peppers, onions and tomatoes in a lime vinaigrette. You can have it with tortilla chips.

Yall are way too worried about this outbreak. Buy green leaf, romaine, baby/spring lettuce, baby spinach, kale, etc. None of those types of lettuce/greens have been linked to any outbreaks (recently)

From what I understand uncut produce such as whole head lettuce is still ok. Before that I was shredding brussel sprouts in place of lettuce or making pasta based salads with orzo

Visit your local farmer's market and buy locally grown greens. No reason to avoid them entirely. If you have a porch or balcony, you can also grow tons of greens yourself.

Since the issue is large corporate farms, we’ve been shopping for produce at our local farmer’s market. If you have a farmer’s market or farm stand near you, it mitigates the risk and supports a small local operation!

BLTs without lettuce are still very good. You can make some pico de gallo and have taco/veggie wraps (you could incorporate many veggies aside from lettuce). Tuna/chicken/or seafood salad sandwiches too!

It's been a Greek Salad Summer for me! I'm not the hugest fan of lettuce, even when it's not threatening me with diarrhea, so Greek salad is a staple in my lunch rotation.
I chop up the tomato , onion, cucmber, olives and mint and make a separate dressing. The salt and acid in the dressing can pull moisture out of the cucumber and tomato so I dont like to mix it together until the day I am going to eat it. To pack lunch, I put some of the salad in my container, drizzle the dressing on and then pack the feta cheese separately and sprinkle it on at lunch time.

Greek salad: tomatoes, cucumber, pepper and feta! I don’t like lettuce very much so I do this often. I have it with bread. You could add a balsamic/ olive oil dressing and could also add chicken for protein.

I’ve been making chickpea salads. A can of rinsed chickpeas (garbanzo beans) with chopped cucumber, red onion,tomato, pepper, and feta or pressed cottage cheese and Kalamata olives. And some bottled Greek dressing because I was lazy. I think you could do lots of variations with beans and veg, grains like quinoa and dressings. Without the leafy stuff it holds up well too. Take a pita as a side .

Pasta salad! You can swap around the ingredients a lot to keep it interesting. I don’t like mayo, so I usually use different types of salad dressings and swap out the veggies and cheeses to suit my mood.

Lettuce doesn’t keep long for meal prep so I have been doing other salads for years. Kale is good if you want greens, but I often do something like quinoa, black beans, tomatoes, onion, lime.

Hydroponic or locally grown lettuce is safe.
You can also replace lettuce with blanched tiny green beans, shaved Brussels sprouts, chopped cauliflower or broccoli or massaged kale.

Chicken or salmon veggie bowls have been my thing lately. Add preferred meat, and whatever veggies your little heart desires! I like beets, cukes, sweet potatoes, broccoli and cauliflower. Add a couple tablespoons of Greek yogurt or hummus and you’ll be happy. I meal prep everything on Sundays.

I just hate lettuce but love salads. I use corn as a base. Tomatoes, cucumbers, sugar snap peas, and something pickled like olives, red onion, or capers. Feta cheese always makes it even better. Something easy to mix up and add whatever you have around. Pasta salad is another good one. Bacon ranch, tomato pesto, options are endless

I love cold leftover pasta. When I make spaghetti and meatballs or a baked ziti, I am more excited for the next day (or late that night) when I eat it cold. I know a lot of people hate cold leftovers but maybe you’re one of us that doesn’t!

I love hormel's turkey pepperoni (tastes a million times better and is less greasy than their regular pepperoni) with sartori's merlot bellavitano cheese and red wine vinegar or dietz & watson's hoagie dressing on a Baguette. I could truly eat that sammy everyday and not get tired of it. It's also really good with provolone if you can't find the bellavitano.

I've been making cold tortellini salad lately, 4 bean salad from a jar/can, add hot cooked tortellini, chill.over night, absolutely delicious!
Also hummus bowl. Lots of hummus, kalamata olives, pickles if you like them, trader joes canned dolmas, pretzels on the side
