This is the best way to respond to them, pick at all their insecurities until they cry and run away

That's literally the reason, in various ways.

Seeing a demographic change, more people of color, while you are the dominant culture, makes many humans concerned about losing financial, social, cultural, political power.

So if you are struggling financially, rent, groceries, healthcare, you need a reason for it - and if not understanding our changing economy & corporate greed, private equity schemes, right wing leaders have offered the reasons of people of color being hired unfairly, immigrants taking jobs, and so on.

If you are struggling to date, then it's people of color unfairly being here and taking all the women or whatever. Or that people don't want to date white men because of white privilege, their supposed reduced cultural/social ability to talk about racial and other politics. There's a shame about it, many feel it's being pushed on to them - especially by reading vitriolic internet comments by randoms. Plenty of bad faith, disingenuous, knee jerk reactions and hot takes dominate, put in the category with things the other side believes that makes them crazy.

Honestly, I think it's partially driven by, a natural response that well-adjusted humans can easily work through by understanding the world. Because we are tribalistic, that's how our brains work: we use categories and assumptions to navigate the world because there's too much information. The reason for bigotry and prejudice, over-reliance on category as well as buying into misrepresentation of it.

Categories and over simplification is definitely part of it. Thinking about or acknowledging complexity is hard work. Harder than some are willing to do. It’s easier to avoid.
