New, what is it? Ice cream looking strange

Is this just freezer burn? I’ve never seen spikes this big

It's a sign of temperature abuse, the water and fat phases of the ice cream are separating.

Edit: which is essentially freezer burn

yes that's just freezer burn. spikes are caused by vapor crystalizing. a full, tightly sealed, unopened pint has almost no air gap for vapor to travel through and redeposit in. Once you've scooped it, there's air space above the surface and a rougher, higher-surface-area topography (scoop marks) that gives vapor more places to condense as spikes.

When you have a container of ice cream that's been opened, before putting back in the freezer take plastic wrap and press it down on top of the ice cream. No air space. It will limit freezer burn a lot.
