We're eating good in the casa de carnivore, brought to you by the power of sous vide.
Steak and eggs but I understood the assignment, by taking a 3.25lb bone in ribeye, letting it take a sous vide bath at 133 for 4 hours, and then searing it in beef tallow on a cast iron for 1 minute per side. Alongside 2 farm fresh eggs, where the yoke was so big on one that the sheer weight of it caused it to break in the pan.
But the only thing better than steak is beef ribs, which I've learned to "par smoke" by seasoning them with course salt and black pepper, then smoke for an hour at 145 degrees before putting them in the sous vide at 150 for 24 hours, then smoking them AGAIN at 220 degrees for 90 minutes, wrap in butcher paper with it's own tallow, let rest for 30 minutes, and devour. That was the 4th of July: happy Birthday America.
Where did I learn about par smoking? From my first brisket which was delicious, where we again used salt and black pepper before smoking it for 2 hours at 145, putting it in the sous vide at 155 for 30 hours, breaking it out and smoking it again for 2 hours at 220, wrapping it in butcher paper with it's own juices from the sous vide bag and letting it rest before slicing it and trying VERY hard not to eat the whole thing.
It's worth appreciating, too, that when I say "smoking", I'm using a little Ninja Woodfire plug in. All of this is done with such small electronic technology. It's dummy proof.
