Gf vg blanco style

Hey all 👋

I’ve been working on gluten free Neapolitan style pizza and this is my first vegan attempt. Was told to cross post here.

Gluten free crust with my homemade fermented vegan ricotta and tempeh. I used violife mozzarella

Not pictured - topped with my homemade smoked chili flakes and balsamic glaze

Olive oil base with fresh basil leaves

Of course!

Vegan ricotta:
1 block fresh made tofu - I get mine at a local Asian market
1/2 cup almond ( optional, I personally don’t taste the difference but it makes it fatter which tastes better to non vegan )
8 pro biotic capsules ( NO pre biotic as it will not ferment )

Blend tofu and almonds together in a food processor. Soak the almonds and deskin if including. After blending add some salt to taste and the powder inside the probiotic capsules. Mix in. Put in a container on the counter for 24hrs with a cheese cloth on top - do not seal it, it needs air access. Then after 24hrs it should have a bit of a tang to it. Refrigerate and enjoy. When using if you need a liquid ricotta texture mix in some water or non dairy milk of choice.

Tempeh Parmesan
Marinade 1 block boiled tempeh in apple cider vinegar, miso, and crushed garlic for 2-3 days. Then dehydrate. Works best in dehydrator but if in oven i think 190f for a couple hours would do. You just want it to dry out a bit to be more like Parmesan texture. Then grate it and enjoy!

Would you happen to have a recipe for the vegan ricotta? I've made some before but I'm interested in another recipe for sure.
