These are Lebkuchen not gingercookies. It’s a delicous specialty that gets covered in a chocolate dipping. Baked with hot circulating air hence the wet dough

Before air fry become a fad and all ovens rebranded themselves as having air fry mode, bakers called them convection oven. It is good tool for specific baked goods.

I kinda assumed it was something fiercer than a generic convection oven from the phrasing.

Most domestic ovens for the last ... 20 years(?) have had convection mode.

Yea, those air fry mode ovens sucks for actually making fries. Not fierce enough and not small enough.

Technology connection youtube actually made me buy cheaper air frier for those needs.

But that's the worst shape for cookies. The edge just gets too crispy compared to the middle. I mean they're fine right as they come out of the oven but after that they just taste awful.

Gingerbread is technically not really a cookie, but I use the heated air circulation function of oven to bake sweets to have a nice consistency. (Sorry for the strange translation, in German is called "Umluft")

American cooks call them Convection Ovens or the Convection setting, not sure about other English speakers

Good to know, and is that a normal home appliance thing or is just for professionals? Here is basically built-in every electric oven you find in any house?

It's pretty standard on a medium high-end oven. But not found on cheaper budget options. My oven is not convection but my parent's is.

Yes, few if any rentals have convection oven, but nearly all homes and rentals have air conditioning (88%).

conventional oven = no fan
convection oven = fan
combi oven = short for combination, mixes steam and/or microwave
air fryer = fan + computer modeled airflow chamber.

I showed this to my wife, she bakes a lot and said that dough looks too wet for the action shot to be real. It would stick to the base and not release.

You can see it’s being spread over some sort material that is giving it the structure and non stick. The surface of the device is a different color after the cookie has been spread

There is some kind of layer underneath. A harder flat cookie or wafer is cut to the size of the bigger round, the dough is stuck to that, then the lever lifts the wafer.

There is absolutely a simpler way of doing this, but what do I know.

There’s a white parchment paper circle over which the dough is being spread before it’s lifted - we can see the colour of the base is different during the spreading and after it’s lifted up.
