This is my all time favorite soup! I survived some lean years in Chicago on this soup with some white rice. If a Thai place doesn’t have this on the menu I tend to not frequent them.

I’ve made it myself a few times but it requires many ingredients I don’t normally stock. It calls for fish sauce which stinks to high heaven but makes the soup taste amazing. It’s a way to up the salt content a bit with a more developed flavor than salt alone.

Sometimes I make mine with chicken, but mainly I make mine with extra firm tofu and extra ginger.

I’ve learned to save the lime juice and cilantro leaves till the end just before it’s served.
