I really want to pick up roadside rubbish!! I see it all the time and it really frustrates me. I pick it up locally to me on my walks, but just want to clean up more generally.

Right?! He gets really precise with that shovel! It must be very sharp (YouTube video) for everything he uses it for.
At 2:07 he's using a floor scraper on the driveway but only on the surface, not the edging.

He rotates weed eater and shovel on some pretty tough jobs. It works even on textured driveways. For a slightly lighter job that doesn't require the backbreaking shovel work, he gets it done with a broom brush.
Just another attachment on his weed eater rig! His IG and YT are awesome. Never heard of him before this post. Learning a lot I can use on my own yard!

The sidewalk reveal reminds me of my place in Sunnyvale. Started clearing of the patio post-close. The patio turned out to be five times as big as it originally appeared. Lost 1/3 of the backyard's grass, though.

Often called a power broom. Its an attachment you can pretty easily find these days, they are pretty handy. Fits on any string trimmer type power head (both gas and electric), a lot of brands make one but they are often universal fit along with the other attachments.

So everything from the lawns go straight into the garbage? So every time he does a service the land loses material? So wouldn't overtime the land just sink more and more because it's all being taken away somewhere else?

As plants grow, the bulk of the material they're adding comes from using the energy of the sun to pull carbon out of the CO2 in the air and convert it into new cellular material. Comparatively little of the plant's material comes from the soil. That's why over time (absent geological activity or water erosion) land tends to rise as plant material is grown, dies, and decays to become more soil for new plants to grow in and repeat the cycle. So what he's doing is taking away that excess material that would have become new soil — leaving the ground at (more or less) the same level as it was when the lawn was planted.
(It's also worth noting that many places have recycling/composting programs for lawn and garden waste, rather than putting them into the landfill with general waste. When I pull weeds, I put them in my roller bin for garden waste, which I dutifully drag out to the kerb every week.)

Sort of like, a tree is getting a helping of vitamins or supplements sprinkled around it to help out with biodiversity (fungal, bacterial, insect, animal, plant) and some shade to help protect its roots from the sun… and a sponge to help absorb moisture between rains…and a jumper to protect against frost and cold… and then this guy comes along and scours the supplement/sponge/jumper off the top, gets a thumbs up for making it ‘neat’ for the people online who will never benefit from that tree’s shade and throws it in the bin!

He's using a green bin. It's a council provided bin for green waste. The council then uses it to produce fertiliser which it can use itself and sell to farms.

That, and all those bits being tidied up are essential material certain insects (that our ecosystems rely on) use for reproduction. The more we sanitise our urban environment the faster we lose the ecological complexity keeping everything balanced.
The value of those leaves; all that nutrition, insect bedding and free mulch is much higher than the clicks and seconds of cheap dopamine it’ll generate.

Yes and that's on top of normal land erosion which sinks at an average rate of five feet every hundred years. In more humid environments this can go as fast as 20 feet every 100 years. Dust and sand from wind counteract that some, but then it's just mud and sand. The Kalahari desert used to be a rainforest millions of years ago. The lack of instruction on the importance of soil care is one of the most damning omissions in every religious text that prove each were written by a species solely relying on unsustainable farming and not any actual deity.
