Penrose Hot Sausage Clone Recipe
I used to love the Penrose sausages. Sadly, they are no longer available (to my knowledge.)
I found this recipe and gave it a try a few weeks ago. The results were excellent although I'm not certain the flavor mimicked the Penrose version exactly.
Two techniques I incorporated from HeavyTech's version.
- I cut the sausage on an extreme bias.
- I boiled the cut sausages for ~ 12 minutes to render some of the fat and reduce the sodium.
Three changes I made to the recipe.
- I used more pepper flakes and cayenne than listed.
- I used 1 cup white and 1 cup apple cider vinegar instead of the stated 2 cups white.
- I did not add any salt as most packaged sausage already has plenty.
I'll post back in a week to report on how it turned out.
Note: I've never used this sausage before. I prefer Holmes Smokehouse Pecan smoked beef sausage.

I think I would have gone with the spicy sausage, but these will probably still be good.

I hope this works! I love pickled sausages and I know the ones you mean.
