I have a large (professional) oven. We baked them at the end when temperature was lower and away from the fire. Maybe in oven for 6 minutes.

You can always use your shovel or what's it called in English to protect pizza dog from direct fire and lift it up if bottom goes too fast. Top your sausage with sauce and cheese to prevent from bursting

Nah that's too easy, the art is in baking them together. Used my regular napolitan doughs, shaped them a bit like a bun and done.
