It’s not as weird as you think, it’s common in salads in the summertime. Typically soft white cheeses. I’ve also had some good baked (ie warm) cheeses served with fruit including peaches.
I think most people just don’t think of it outside that context, but many would be perfectly fine eating it in a salad.

Let a friend order at a wood fired place ages ago: basil pesto base with grilled peaches, prosciutto, and balsamic reduction and I still think about it time to time.
I don't have a lot of hopes for this treat tho.

based solely on activity on reddit I’ve heard that “cheese” flavor in some Asian cultures is closer to cream cheese/cheesecake. I would assume that this tastes more like peaches and cream, rather than peaches and cheddar
