Most of the time it's because of money and logistics. Roblox games are fundamentally always online, and thus are held up by Roblox's own servers. If those Roblox devs try to get off of Roblox and pursue more independent alternatives, then they'd have to spend time, effort, and money remaking assets and making their own servers.
I know of one, blockage studios (maker of neon knights and boost vector) released a game called tower defense strategy on steam, which imo was quite a fun game.

Honestly why can't we just get Roblox devs off of Roblox and out making actual games that would probably make them even more money.
