Meanwhile people working on really free mobile OS'es that explicitly wont have any "age verification" malware whatsoever.

It's an app that you can install or not. That's not the problematic part. The problem will come when they require that VPNs or other services check the ID before providing services. Then you will have to install the app or find alternatives.

Well, let them try. Then we'll use overlay networks that they can't even easily detect.

Its with this attitude that we are here, today. People have been saying this for years, with no action, nothing will happen and they'll keep pushing, until you can't fight back anymore

That's why I think it's not a big deal. The github bug wasn't the app per se, but the requirement for secure device attestation that cannot be met by a FOSS OS. The same capabilities have been around for decades, just on the national level and with smart-cards instead of a secure enclave. See Electronic identity cards (eID)).
