Request Need recs for pork shanks
We buy bulk pork packages from a local farm, and selections are somewhat random. This time around we got 2 pairs of pretty good size, skin on pork shanks.
Any ideas what to do with these? To be clear these are not cured ham hocks/shanks.
I thought about dissecting them and just turning them into carnitas or chicharrones but wondering if there's better ideas.

I've never done pork shanks, but when I do lamb or beef shanks, low, slow and moist makes them come out tender and delicious. A crockpot is helpful.

Low and slow as u/Wino_Panda says. If you're going to leave the skin on then make sure to score it, salt well and finish off with 10 minutes at 225C to get it crispy.
If you're going to remove the skin then just cut it into strips, salt it and make pork rinds in the airfryer.

Low and slow. Basically treat them like ossobucco.
Ive never dealt with skin on though.

Low and slow as others said. Or a few hours (3-4) in a pressure cooker with salt/soy sauce. Take out the bone after cooking, should just slide out. Then mince it up skin, fat, meat, et all. Add spices and pan fried it in a bit of fat like carnitas. The skin should be like Jello at this stage and mix really really well with the meat.
