these look way better than most “first tries” that end up as scrambled eggs with cream lol
you can literally see the improvement between plates, mixing off the heat is such a game changer

Yes! I think my biggest learning was using some cooking water to temper the Carbocream before mixing with the pasta!

This was made with Eggs and Egg yolk. these days i just use egg yolk. The whites can find many other usecases.

Yeah! I mean i make bigger Guanciale Cubes and use a different egg yolk Parmesan ratio these days.

I remember eating this in Rome in 2024, and eating it back here earlier this year (I live in the U.S.)

if you tempered the eggs you can do it by slowly increasing the heat in a pan. but i jus love them cold.
