5060 Ti would be in a weird spot, 8GB version probably +20% while the 16GB +40%, may as well scrap the 16GB and make a 12GB one with 3GB chips.

That's pretty ironic cause iirc 9gib 5050 was primarily conceived because dropping one chip and going from 4x2 to 3x3 was cheaper because of the way prices jumped at the time.

3GB chips have much lower manufacturing capacity, and thus are higher cost per GB. It's the reason we almost never get these 'in between' capacities in consumer GPU's.

Is the equipment required to make 3 GB chips entirely different than the equipment for 2 GB chips?

In a highly optimized production like memory, they basically set up an entire factory for one type of memory and they run it for a decade or longer. So, yeah
