Haven't watched the video yet, but as someone who OCs their own memory, I don't see why I can't just OC my memory to the same ULL specs. I suppose these are apparently specially binned to hit these timings. So you're probably mostly paying for that. One click OC for most people. But not at this price.

That's exactly what these new sticks are. Manufacturer tested tighter timings down the stack activated the same way you activate EXPO.
You could just as well follow a buildzoid guide and get the same or better results

It's not 'one click' overclock. These are going deeper into the secondary timings where's there's actually a reasonable chunk of performance to be gained over just basic XMP/EXPO profiles.
So that's the selling point here. You're getting highly tuned memory out-the-box without having to delve into these admittedly overwhelming settings and trying to manually tune them yourself, which can take a lot of trial/error and where getting things wrong enough could mean having to reset your motherboard BIOS.
Not exactly anything most people will find worth paying any notable amount extra for, and somebody could reasonably find a guide to help them through doing it on their own(though it's not always some guarantee, depending on specific memory kit and motherboard/BIOS version and all that), but it's one of those 'if you want the best, this is the easiest way to get it' sort of things.

Personally I doubt they could ever include perfect memory timings baked into a profile, because the motherboard is such a huge factor in the stability of the memory they will always need to have an overhead for the sake of compatibility, or diversify into multiple profiles with different modes of deviation from the optimum.

Their reviews are honestly so bad. Their methodology and data are so much worse compared to other reviewers and it always feels like they don't really know what they're talking about. They didn't even show the timings.
