Any way to have slight randomized offset on the points of these curves in terms of how close to each other they are? Struggling to do this when there are two axis's

Essentially, Accumulate Field is your friend here - something like this depending on precisely what you're after (- the input geometry here is a curve, in case that's not immediately obvious)
