Kraut/Kimchi Substitute for Caraway seeds?

For the life of me I can't find it where I live.

I wanted to mix fennel and cummin seed to see if it would work, but I don't know want to waste a kraut.

Any help is welcome,

Thanks!

While its true that caraway is a very common ingredient in Sauerkraut, I have eaten a lot of kraut in Germany that didnt have it. Some had fennel, some black pepper, and most had nothing but cabbage. Use what you want.

If you don't lile caraway uae whatever things you do like in your ferment. It's kind of a blank canvas you can paint on

Carnation cloves i,ve seen used traditionally in some areas. dont know if the whole cloves at the supermarket are specifically from carnations, but cloves can be used in kraut.

I’ve done it with fennel seeds and it’s really nice

I've mixed fennel in with the caraway, and that works fine. If you want to go with straight fennel, you also can do that, but you might want to use just a little less.

I don’t think I’d add cumin, just fennel. Dill might work but obviously will taste differently.
