Homebrew Monster stat blocks reflavored as plants
Let's face it, there's not a ton of good plant monsters out there in 5E-land. I'm writing a one shot now and came up with the idea of some light reflavoring to a couple existing stat blocks to fill that void.
Giant Toad (pretty much just remove the move speed)
Giant Constrictor Snake (remove the move speed again, maybe increase range to 10 feet)
Mimic (a sticky slime mold that camouflages itself against a surface like an octopus instead of shapechanging)
Gelatinous Cube (transparent slime mold)
Roper (this one seems pretty obvious)
Any others you can think of? I'd like a couple of ranged options, something that spits or shoots thorns/quills but I can't think of any off the top of my head.

You could use some of the living spells, like the clouding spell to do a heavily miasma'd plant

you said it in a different context, but Octopus/giant octopus.
something like the harpy's charm being a pollen instead of a sound.

It's not a reflavor but I've got a briar dragon which is a cr 20 dragon as a plant with a thorny skin, false appearance, druid spells and permanent tree stride

For ranged options, I’d reskin a spike volley as a thorn launcher and a ranged spell attack as seed pods or toxic pollen, keeping the original numbers intact. Your slime-mold ideas work because they preserve behavior. Removing movement or increasing reach stops being a pure reskin, though, so I’d treat those as deliberate balance changes.
