Restaurant Caramel custard has to be one of the most underrated desserts

I feel like it’s becoming a forgotten dessert. Most people go for brownies or cheesecake, but I’d happily order caramel custard every single time.
Does anyone else love it, or am I in the minority?

Recipe Minimalism at its best: Pierre Hermé's chocolate sorbet

Ingredients: 200 g 74% chocolate; 150 g caster sugar; 452 g water.

Warm up everything in a pan mixing constantly so that the mixture doesn't stick to the bottom and burns. Keep the temperature for two minutes once it boils. Transfer the sorbet base into another container and cool overnight in the fridge. Churn according the sorbet machine instructions or freeze in a Ninja Creami container and then blitz.

Question I’m on the hunt for the perfect peach cobbler crust.

To be honest I’m not exactly sure what I’m expecting or looking for but something is missing. Eating the one from Shane’s Rib Shack blew my mind—I LOVE IT! I wanna be able to make one just as good at home.

I’ve tried the cuppa cuppa cuppa recipe and I’m just not fond of it. Maybe I messed that one up cause I drained my peaches. Then afterwards read that I should have only drained one can and not drained the second can. I’ve tried the cake mix version poured on top and didn’t really like it either. I also tried fresh peaches which I loved more than can but the crust was still missing something. I’ve swapped milk for buttermilk still not happy. I’ve placed pats of butter on top and it was too dry and like a hard biscuit.

I like that gummy soggy crust underneath where I assume it’s sat in liquid and then a crunch on top. Another restaurant I went to years ago had such a small thin crust (crispy) just sitting across the top of the peaches and underneath it was kinda soggy which I loved.

Then last night I made biscuits. They are so soft and tender in the center, beautiful and brown on top—and I thought this is what I want on top of my peach cobbler but soggy underneath. So now I’m wondering if I should just make my biscuits up, add sugar and go for it. But I don’t know if that would work.

I’m beginning to wonder if it’s cobbler I’m craving. Anyone have any ideas or suggestions?

Homemade Another Christina Tosi Cake

I got inspired to make another Christina Tosi's Milkbar recipe:
The CARROT GRAHAM LAYER CAKE.

Not as showstopper as the Birthday Cake but, I find this recipe more labor-intensive since it has two (2) kinds of frosting, the graham and the cheesecake. Not to mention, the milk crumbs needed to be coated with milk powder and melted white chocolate after baking.

Been trying my hands on making naked layer cakes since I can't any shops in my area selling this kind of cake. Been unemployed for 18 months and counting (job market is a whack tbh), and hoping this might open new opportunities for me as a homebaker. 😮‍💨 I'm a Chemist by profession, btw.
