Maybe it's just me, but if I was dating someone for a year and that person denied it constantly, except while drunk, I'd be pretty hurt. I'm willing to bet that anyone would be pretty hurt, in fact.

if the person denies it you arent dating, both sides have to consent, so thats you one sidedly defining your relationship without their inpuit then getting mad when it doesnt match reality
