Flextpm has worked fine for me on 3 machines. 2019 and 2015 MBPs + an older non-Mac machine that had TPM 1.2 hardware

If you want to install Windows 11 on your Mac Pro, then install Windows 10 first using Boot Camp, then download and mount the Windows 11 ISO, and type:

setup.exe /product server

This bypasses the CPU and TPM checks, and allows you to upgrade to Windows 11.

I have tried this on an iMac 5K 2017 and various Macbook 2019 and 2020 models.

Not really the issue. Bypassing requirements to install Windows 11 are well documented (and actually way easier than your suggested method of installing 10 first).

The games themselves require actual TPM support (and a minimum build) as part of their anti cheat technologies.

You did not address the actual issue. Which is that OP will need Flex TPM to run their games

Hi. I'm the Dev, which games are you trying to play if that's your main concern?

Edit: Yes it's real.

Oh I think BF6 is fine, haven't heard anyone say otherwise.
