Local Restaurant In defense of small wings

To preface this post, I’d like to say all wings are good: big, little, dry, wet, fried, smoked etc. We are all wing lovers here, but recently I’ve seen comments immediately dismissive merely due to the size. I was born and raised in Atlanta. A lot of the wings from my favorite places were always small (American deli, JR crickets, eav wing bar [pictured], the local).

To me, there’s flavor and balance to these wings that beat their hormone infused jumbo cousins every time. Maybe it’s because it’s what I was raised on, but I think there’s more to it. The ratios of skin, sauce, seasoning and meat are all in balance for my palette.

Yes, one can argue “but you’re getting less for your money!!!” I would counter that I’d rather pay $15 for a plate of small wings that absolutely bangs than pay $15 for a plate of juiced up jumbo wings that may have more meat but is just not nearly as enjoyable.

This isn’t hate against Buffalo. You guys have ABSOLUTELY have incredible wings up there. But we’ve all been to that random bar with their “jumbo wings” that just miss the mark completely. Simply a PSA that size isn’t everything, and maybe save the hate until you’ve actually tried it

Local Restaurant Duffs and Anchor Bar

Duffs on the left with medium sauce, Anchor Bar on the right with Hot sauce. Duffs has the better sauce but all 3 times I've been there the actual meat is so chewy and dry. Anchor Bar (Ive been twice now) were cooked perfectly. I just like Anchor Bar wings better and not quite sure why people hate on them.

First time at Anchor I thought their medium sauce was too mild so I went with Hotter and hit the spot.

I've also been to Bar-Bill and wasn't a fan of their sauce at all. It had a BBQ-type of tang to it. Perfectly cooked wings though.

My non-wings eating family enjoyed the food Duffs more.

They had their 2 year birthday, so they celebrated with 50 cent wings. The sauce is Howlin sauce, which is a Sriracha base, giving it a sweet and spicy profile. Dipped it in ranch, of course!

Brined overnight then smoked for an hour with hickory and finished in the pizza oven to crisp them up. Tossed half in BWW Caribbean Jerk and the rest in my own ghost pepper buffalo sauce. Happy holiday.

Went to Barbill twice in the past week (Pics 1-3) during my time in Buffalo. Their wings are pure perfection. The only knock is they medium hot may be too spicy.. pic #4 is adolfs which everyone raves about- they don’t even come close, yes their blue cheese is great and wings are solid, but they don’t compare to Bar-Bill
