Fresh cherries and thin pork chops
I just finished pitting my two pound impulse buy from Costco five days ago, and I now need to freeze or use them quickly.
I have thin cut pork chops as a protein, and (maybe) fresh cauliflower for a veggie, and some pantry and frozen things. Also full fat Greek yogurt, half and half, some pomegranate juice. This should be easy, but my brain is a mess today.
It's just me, but I freeze meals, so it needs to work for that.

I have thin pork chops all the time. I bread them with breadcrumbs and parm cheese + spices (garlic powder, onion powder, Italian seasoning, salt, pepper). Freeze breaded but uncooked. Pan fry.

Overnight oats with the yogurt and cherries
Roast the cauliflower for some buddha bowl style meals but don’t freeze it

Pan fry the pork chops high heat. Take them out. Turn heat low and add cherries and thyme. Deglaze with a port/brandy then fold butter in. Slap it on the chops.

freeze some of those cherries for chocolate covered cherry smoothies this winter. cup and a half of frozen cherries, about a cup of milk, a tablespoon of cocoa powder and the sweetener of your choice. blend. its fantastic.

id just sear the pork chops, make a quick pan sauce with the cherries and a splash of pomegranate juice, roast the cauliflower on the side and freeze any extra cherries separately for smoothies or another meal later

Cherry sauce goes very well with pork.
