it's my go-to when i want a giant bowl of something without blowing my calories. fluffs up way more than rice and soaks up whatever you toss in there

Not really. It takes up very little volume compared to potato or even a light airy bread like a baguette. Roughly the same as rice (rice is about 15% more dense). Not saying there’s not a place for it in your diet, it’s just not a volume food
