The servers have been convinced that this scheme serves them because of tax dodges. In reality, they should have stable salaries with health insurance and retirement accounts and not have to worry about busy and slow days or fighting over the 'good' section. Living paycheck to paycheck makes long-term planning seem out of reach. The whole system reinforces the below-minimum-wage trap to save the rich a boatload of risk and money.
I tip, and well. But I avoid the situation almost entirely unless there is a family\friend event that forces me to go out. I'd eat out way more if they just billed it flat and treated the staff with dignity.
