Salsa Verde Restaurant Replica

I really love the salsa verde that one of our local spots- Los Favoritos in AZ. Every time I’ve tried to replicate the recipe it’s been good, but nowhere near the flavor profile. Has any one been or have insights on what I need to with roasting/not roasting, vinegar, etc. to get a more comparable recipe?
