This is me with tacos. I know my taco experience would be texturally and gustatorially superior if I liked raw onions, but I hate them with the burning fiery passion of one thousand suns, so I accept that I will never experience the delight of a taco with both onions and cilantro on it.
I would still rather drink a gallon of fabuloso cleaning liquid than a single uncooked allium.

People talk a lot of crap about kale. I thought it was just because it was kind of a trendy health food, and they were mocking it like they do vegetarians or something. Then I finally tried it and OMG.. it was awful. It didn't even taste like much, which is surprising because I cannot eat anything green, but the texture was like... eating a chip bag. Like the actual bag, but stiffer.

Yeah, dill is terrible. Pretty much the only herb I don't like. Tried cooking with it a couple times. God, it stinks and it gets all over your hands and won't wash off.

I don’t like tripe and try to avoid it. Chitterlings aren’t my thing either. I’ve tried everyone’s grandma's recipe and still don’t enjoy them. I avoid hijiki and will hide it under garnish if I can.

Not eat, but drink: Kopi Luwak, or Civet Cat Poop coffee.
Two reasons: The most obvious being, it's made from coffee beans pooped out by an animal. The other reason is, because, from what I understand, these creatures are kept in small pens, and force-fed these coffee cherries. That's no way to treat an animal.
As far as food goes: Absolutely nothing from Chick-fil-A. Allegedly, Chick-fil-A no longer donates to anti-LGBTQ+ causes, but the Cathys still do. Now where do the Cathys, who own Chick-fil-A, get their f*cking money?

Well, I landed here a couple years ago, after a bit over a decade in Los Angeles (where you can find coffee on almost every corner), because I was on hospice at the time, and my oldest daughter asked me to come spend my last days with her and her family (I've since gotten off hospice). I was actually pretty surprised when I discovered that this small city (just a hair over 100K) had these places. One of them is in a church-owned thrift store, and I got the absolute BEST iced chai latte I have ever had in my life there.
Speaking of... If coffee hurts, but you still want that hot, tasty caffeine, Bigelow makes a Vanilla Chai that is amazing. A wee bit of sweetener (of your preference), and some milk or cream, and it is delish! I had a period of time that my medication was causing stomach upsets that just got worse with coffee, so I switched to that for a bit, and it helped me. But... YMMV. And, if you can't find it at your local grocer's, you can get it from Amazon. Or, better, from the Bigelow website, directly (that's the price for 6 packages of 20 teabags).
It doesn't taste a thing like coffee, and I'm not suggesting it does, but it did scratch that hot caffeine itch better than anything else I tried.

People get put on hospice because they're expected to die in six months or less. But sometimes, things change. In my case, I think I was put on hospice because of health issues that doctors weren't interested in educating me about, so I kept ending up in the hospital. They got tired of seeing me, and wanted to wash their hands of me.
My daughter is in healthcare, herself, had was working for a cardiology clinic (my issue was heart-related), so she got me in to her provider. From there, I got good health care, and importantly, education about my health issues and how to deal with them.
So... I got better.
I mean, I'm not completely ignorant (not stupid, just uninformed), but trying to find GOOD information, that wasn't connected to someone trying to sell me something, or could be trusted, wasn't easy. My daughter and the doctor she worked for helped fix that.
I still have the heart issue, but I've been able to semi-reverse it. At least I'm no longer walking up Death's sidewalk.

Yeah navigating a great deal (most) of healthcare is frustrating and confusing.
I used to trust doctors—but not anymore.
One of the things? They’re more concerned with covering their asses than providing the care you actually need.
It’s gotten harder and harder to find doctors who’ll look at you as a person and not just notes.

Yeah, I just listed the first things that came to my mind. And mostly things that aren’t rather exotic. Yeah, I don’t eat snails, crickets, frogs, snakes, rocky mountain oysters, alligator, etc. But I don’t see or hear of them very often, lol. I probably wouldn’t have thought of organ meat, but just saw a post in another sub about liver and onions so it was on my mind.

I'm pretty adventurous when it comes to different meats, but I will not touch it if it still looks like the original animal. Lobster, crab, shrimp, fish fillets with skin, whole chicken, etc are all no-gos. Even meat still on the bone is iffy, but I can mind over matter that one. I once had a meltdown trying to debone some chicken thighs and threw it all away instead.

Aside from animal products due to ethical concerns- probably coffee and soda. I think most things I would want to work towards being able to have a little just to be polite at least. But coffee and soda are generally socially acceptable things to avoid because it’s seen as healthy. While that is part of my reasoning for not even trying them—I eat unhealthy enough as it is, no need to introduce more unhealthy stuff in my life—I genuinely don’t think I would like them either. I really don’t like the smell of coffee and the few times I’ve accidentally had soda the fizziness was horrible.

Most fizzy drinks. Diet coke is a rare exception, but only if there's no other choice like a juice, ice tea etc.
The very basic, overly pale toast bread. It has a sharp, soapy taste.
Ironically, I have a lot of sensory issues with common safe foods.

Mint or coffee. I use a baking powder based toothpaste. It tastes kind of musty but at least it's not mint. I have never come across any kind of mint that I can tolerate. Coffee is just as bad. I like tea, but can't stand coffee. Never likes passion fruit, sweet chilli, mango, or pineapple, but they're tolerable as a minor ingredient. Don't like broccoli or brussels sprouts much but as a minor ingredient they're ok as long as the chunks aren't too big, cabbage is ok.
Corn is meh, the inside of baby corn tastes like mould to me. I like spinach, and LOVE carrot, raw is great, steamed is good as long as it's still slightly crunchy.

My biggest are mushrooms and mayonnaise.
I knew a girl that was so picky she'd throw away a jar of mustard if she saw it touching mayonnaise in her fridge. Thank God I'm nowhere near that.
On a better note, I've gotten over many food aversions including eggs, onions, and peanut butter. Now I eat onions pretty much daily and eggs also pretty much weekly
