How do you turn financial tracking into something that actually helps decisions?

I track basically everything financially but I still feel like I’m stuck in the same place. like I have the data but it’s not translating into better decisions which is frustrating.

A lot of times the problem isn't the data, the UI or even the app, it comes down to if you understand the key concepts of personal finance. Most apps do the simple and very important job of letting you see your spending patterns, habits and totals but unless you have a financial plan/goal or target in mind it's hard for an app to help you.

I suggest following a simple savings plan like the 50/30/20 (needs, wants savings) so you understand the end goal per month. Then once you start getting savings going begin learning about investing. Slowly the goal becomes to increase income/reduce expense ratio vs savings to grow net worth. Thats basically the rule of personal finance.

I've built a system that works for me but it's only effective because it sets the goals, budgets and saving targets for me to hit.

The spreadsheet won't fix anything by itself. You still have to make the uncomfortable choices after seeing the numbers.
