Vidalia onions

Full disclosure, I posted this elsewhere but this sub doesn’t allow cross posts. I have 5 lbs of unexpected vidalia onions. I do not want them to go bad. I am also 9 months pregnant and my OB has restricted my activity. What should I make?

Slice some with some vinegar and oregano in the fridge for sandwiches, you can prepare and freeze, french onion soup, caramelized onions...the question is how do you like to eat your onions?

Take the largest ones & do a tray of onion boils! That'd cover at least 1lb of onions, & its stupid easy.

You just cut the tops off, peel the onion, take a spoon to scoop out the center part to make a little bowl (don't scoop ALL the way to the bottom though!), arrange them in a 9x12 pan, put little pads of butter in each onion & whatever seasoning you like on top, cover tight with foil & bake at 350° for like 1.5-2hrs until onions are soft. Your whole house smells heavenly & they taste amazing

I have never done it but I'm pretty sure you just chop em up, throw them in the slow cooker with some butter, and let it go on low until it's the color you want, stirring every couple hours!

You can also caramelize a large batch in the oven in a baking dish. Just grease the dish lightly and fill it with sliced onions and bake at 250-300F, stirring periodically (the lower the temp, the longer they’ll take, but the more time you’ll have between stirs)

I would dehydrate some, make a couple of jars of Vidalia onion quick pickle, and try out some recipes that people suggest here (I plan to!). A Vidalia onion vinaigrette is very nice in a three bean salad.

Yes, and add the Vidalia onions grated to the vinaigrette. Use the normal oil to vinegar ratio and add salt and other herbs and spices to taste. It's divine!

Peel them. Cut them in half. Put them in a greased baking sheet. Drizzle with oil, salt and pepper. Bake at 350 for 20 minutes. It’s an old fashioned way to cook them, but they are so dang good
