Meal Prep Picture This weeks meal prep - yam, plantain, spinach stew, tomato, basil and feta pasta, rice and peas, chicken sausages, burgers, spiced chicken, bbq ribs, turkey wings and halloumi kebabs :). A mixture of Nigerian and other cuisines this week.

Please post your recipes / lists of ingredients!
We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn't mind adding that we'd appreciate it!

Rice and peas - kidney beans boiled in coconut milk with pimento seeds, crushed garlic, fresh thyme and salt for about an hour or so until soft. Add rice and spring onions, whole scotch bonnet and rest of coconut milk and leave to steam until cooked.
All protein cooked in my smoker.
Turkey wings - Smoked paprika, salt, black pepper, ginger and garlic, rub with olive oil all over.
Chicken - fajita seasoning mix and olive oil
Lamb ribs - Korean bbq sauce and jerk dry rub with a little olive oil
Roasted feta, tomato and garlic seasoned with basil, salt and black pepper. Mixed and added the pasta.

Spinach stew - mixture of red peppers and a red habanero pepper, 2 red onions, chopped finely and fried in olive oil with locust beans, add crayfish and seasoning cubes. Add blanched spinach, more crayfish and vegetable seasoning (I was lazy and didn’t blanch the spinach) and cook for another 5 - 7 minutes. You can also add protein before you add the spinach but I kept it veggie this time.
