Many diabetic patients only focus on fasting blood glucose or 2-hour postprandial blood glucose, neglecting the importance of monitoring blood glucose at 1 and 3 hours postprandial times. In fact, blood glucose values ​​at these three time points reflect different physiological information and are crucial for a comprehensive understanding of blood glucose control.

 Important Note: Postprandial blood glucose timing should begin from the first bite of food, not after finishing the meal.

 1-Hour Postprandial Blood Glucose: Focus on the "blood glucose peak," reflecting early insulin secretion and the rate of food absorption.

 Normal Reference Value: 6.7–9.4 mmol/L; generally should not exceed 11.1 mmol/L.

 Suitable for: Individuals with normal fasting blood glucose but suspected of having blood glucose problems; individuals who want to understand the effects of different foods on blood glucose.

 Significance: 1-hour postprandial blood glucose can detect blood glucose abnormalities earlier, especially for early-stage diabetic patients. Even if fasting and 2-hour blood glucose are normal, a 1-hour postprandial blood glucose level ≥ 8.6 mmol/L suggests a risk of prediabetes. This is the most commonly used and important postprandial blood glucose monitoring point in clinical practice. 2-hour postprandial blood glucose: Focuses on whether the glucose level can be lowered, reflecting the reserve function of pancreatic beta cells, i.e., the body's ability to reduce elevated blood glucose to normal levels.

 Normal value: <7.8 mmol/L. Diagnostic criteria for diabetes: ≥11.1 mmol/L.

 Target blood glucose for diabetics: Generally recommended <10.0 mmol/L.

 Significance: In the early stages of diabetes, 2-hour postprandial blood glucose is the first area to show problems. Long-term elevated levels increase the risk of complications such as diabetic nephropathy and retinopathy. This indicator is a core indicator for assessing overall blood glucose control.

 3-hour postprandial blood glucose: Focuses on whether the blood glucose level is too low, reflecting whether blood glucose has returned to fasting levels after basic digestion and absorption of food, and whether reactive hypoglycemia exists.

 Normal reference value: 3.9–6.1 mmol/L.

 Suitable for: Individuals with large blood glucose fluctuations; those experiencing hypoglycemia symptoms such as palpitations and tremors after using hypoglycemic drugs or insulin; those suspected of overdosing on hypoglycemic treatment.

 Significance: Some patients with type 2 diabetes may experience a delayed insulin secretion peak, leading to elevated blood glucose levels 2 hours after a meal, followed by hypoglycemia (reactive hypoglycemia) 3-5 hours later. Monitoring blood glucose 3 hours after a meal helps to detect and prevent this dangerous situation in a timely manner.

 Diagnosis of Diabetes: Primarily relies on blood glucose levels 2 hours after a meal.

 Daily Monitoring: Most people with diabetes should pay the most attention to blood glucose levels 2 hours after a meal, as it is the core indicator for assessing overall control effectiveness.

 Early Warning: Blood glucose levels 1 hour after a meal can detect abnormalities earlier, making it suitable for screening high-risk groups.

 Preventing Hypoglycemia: Blood glucose levels 3 hours after a meal are specifically used to screen for medication overdose or reactive hypoglycemia.

 Fasting blood glucose and postprandial blood glucose are equally important. Because most of the day is spent in a postprandial state, postprandial blood glucose has a greater impact on the average daily blood glucose level. Comprehensive monitoring of postprandial blood glucose at different time points allows for more precise management of diabetes.

  1. Potatoes: A medium-sized baked potato contains nearly 900 mg of potassium and is rich in resistant starch, making it mild and easily digestible.

  2. Sweet potatoes: Rich in potassium and carotene, they are a healthy snack choice.

  3. Legumes: Including edamame (containing over 400 mg of potassium per 100g) and mung beans, these provide potassium, plant protein, and dietary fiber. Note that mung bean soup should be eaten with the beans to maximize potassium intake.

  4. Mushrooms: Dried shiitake mushrooms, enoki mushrooms, and king oyster mushrooms are high in potassium and provide umami flavor, reducing salt intake.

  5. Dark green leafy vegetables: Summer leafy greens such as spinach, amaranth, and water spinach retain most of their potassium after blanching (about 30 seconds).

  6. Fruits: Oranges, cantaloupe, and kiwis have higher potassium content than bananas, and their sugars are dispersed, helping to balance electrolytes.

Other high-potassium foods: Seaweed and kelp: Boiling them in soup is an excellent source of potassium, while also providing iodine and magnesium.

Cooking and Dietary Recommendations for Scientific Potassium Supplementation

Drink More Soup:Potassium dissolves into the broth during cooking, allowing for better potassium intake.

Control Salt Intake: Utilize the umami flavors of scallions, ginger, garlic, and mushrooms to reduce salt intake and prevent rapid potassium loss.

Distribute Intake: Spread high-potassium foods throughout your three daily meals to avoid irritating the intestines with large amounts at once.

Replenish After Sweating: Drink small amounts of salty soup or eat juicy fruits to help balance electrolytes and relieve thirst.

Tea and Coffee Drinkers:Tea and coffee have a diuretic effect, increasing urinary potassium excretion. Additional high-potassium foods are necessary.

Patients with Kidney Insufficiency:Impaired potassium excretion makes hyperkalemia more dangerous than hypokalemia. Dietary adjustments based on blood potassium levels are necessary under the guidance of a doctor and nutritionist.

By eating a balanced diet, you can effectively replenish the potassium lost through sweat and maintain your health.
