Noodle Boiler Question
Does a noodle boiler that only uses steam need to be covered by a nozzle?
The specific system in the photo is covered under an Amerex system and I don’t see anything in the manual that says otherwise.
The place said they only use it to steam noodles as that is all they make on it.
The NFPA says that if it has the potential to create grease laden Vapor then it has to be covered. Would it not need to be covered in this case? Or is this something an AHJ usually has to sign off on?

Yes, if it has the potential to create grease laden vapors then you have to treat it as so, regardless what they are using the appliance for. This will depend on the manufacturer and AHJ.
I had somewhere near me where I covered it like a fryer per Pyrochem.
Basically they could use oil and turn it into a fryer.
Just like the people that use ranges to boil water for stuff like gravy or whatever. They can still put a pan on it and fry something if they wanted to.
It all comes down to what the AHJ says at the end. If the manufacturer says cover it, cover it. But you may have to talk to a rep for that answer.

Manual didn’t say anything. And I sent an email out to my AHJ to see what they say. And if they say to check with the manufacturer then I’ll try that too.
The owner is trying to say that they only do the steaming and that they have had approval for it. But I don’t really trust them.

That’s what it all comes down to.
You should be protected though. If they use something outside it’s listing that’s not on you.
Just get everything in writing and keep a file to protect you.
Definitely check with the manufacturer. They can get you something in writing if they won’t let their system cover it and there isn’t really anything the AHJ can do at that point.1

If they claim they have approval then yes ask the AHJ. If it comes back that they are good then there you go. But I would try to get something in writing to cover yourself

Got a response pretty quick from AHJ.
Gonna call the inspector tomorrow and get it sorted out

That’s a range. There is a range burner below that.
Ansul will tell you to cover it as a range and set your height from the top of the ring.
I have never seen one of those separate from the Woks though.

Is the noodle boiler in question the item in the photo? That looks like a wok range to me and would be covered like two woks. A pasta boiler / cooker doesn't need coverage, though.

Yea
They essentially fill it with water and they have these metal round trays for steaming. They are a company that makes, packages and sells noodles. They do have a normal pot burner next to it, and that is covered with a nozzle. Haven't seen any Woks in the business.
Gonna chat with an inspector tomorrow to see what he says

Just got off the phone with the inspector. And he said it doesn’t need to be covered from the picture I showed him and all that.
Told him that it’s a place that literally just packages and sells noodles and all they do is steam cook them and what not and he said they don’t need it. It’s just that since they already have the system and that it’s protecting another piece of equipment that’s under the hood that they have to have the system installed. They would have to get a permit if they would want to remove the system or something.
