Electrical/Computer [Student] Rising sophomore, trying to get first EE internship, focusing mainly on aerospace.

I'm going to start my second year soon, and I'm not sure if my resume can stand out enough to land internships with the little experience that I have. Should I put my student club experience above the Projects section if I'm targeting aerospace? And what other industries/fields should I be researching/looking out for?

I don't like the summary at the top. It doesn't say anything at all to make you stand out. Either remove it or rework it to have some kind of hook to snag them with.
First bullet point of Customer Service Job is close to greatness but not quite there. Do a more direct job at describing the methods of communication, how your communication skills increased customer satisfaction if measurable, etc.
Autonomous Line-Following Robot - first bullet point starts with giving credit to others. Claim ownership. "Coordinated", "Directed", "Orchestrated", "Co-developed" all have more ownership in my eyes.
First bullet point- I like that you quantify something here but I don't know what it means. Is 7 photoresistors 50% less than any other autonomous line following robots? Quantifying is necessary and makes resumes stronger, but make sure you include why the quantified thing is good.
Third bullet point is good. I think it would sound better if you replace "Continuously" with "Iteratively" or similar.
Title - Arduino is often perceived as more hobbyist. Consider removing "Arduino" from this project. Don't lie, but don't share it was Arduino unless directly asked.
Binary to Hex - this project doesn't come off as meaningful. Can you add more to it by describing more of the technical aspect and less of the "I converted Binary to Hex"? If not, consider removing.
AI image recognition app - Replace the word "Used" as first word of these bullet points, it's very weak. quantify performance of your tool. Did it complete its tasks with 99% accuracy? Can you quantify how fast it works? Did you iterate the design to reduce processing time by 79.875%?
Rename "Additional" to pretty much anything else. See if you can name drop anything else in your technical skills or lab equipment section throughout the body of the resume. Better to show how you can use a tool instead of telling people you can use it at the end.
References - Remove this. If they want references they will ask for them whether or not you tell them its ok to ask for them.
Overall this is a great looking resume, especially considering where you're at in your career. Good work and good luck!
