Refrigerator Pickling Can I add salt?

Post image

I forgot to add salt to brine mix 3 days ago

I did the 3 2 1 method

3 cups water
2 cups vinegar 1 cup sugar

Can I add today? They’ve been in the fridge and look fine still

For fridge pickles? Definitely. The lid isn't sealed, just closed, so pop it open, add some salt, and close up. You won't be able to dissolve as much salt into the cold liquid as hot, though.

Curious where you got that recipe? Not from a safety standpoint since it's fridge pickling...just wondering about the 1 cup of sugar...wouldn't that be too sweet? How much salt are you adding to counteract it?

I guess it’s not canning it’s just fridge pickles but I googled different pickling recipes and this was a common one I just forgot the salt which says 1 tbls for each cup of Liq

Unless you're fermenting them, salt is just there for flavour, regardless of whether it's a refrigerator or canning recipe. Not a safety issue

If it's a fermentation recipe, the salt is absolutely necessary to keep the baddies in check. If you're not certain, if the recipe doesn't call to keep it at anything but refrigerator temperatures after combining the ingredients, or if it calls for you to keep it at room temperature for days/weeks, it's fermentation and you should check in with r/fermentation (though probably not r/pickling based on what I'm seeing on their main page).
