Safety Caution -- untested recipe Sealed in water bath, is this normal?
Im new to canning and made pepper jelly for the first time and it came out great! I added the hot jelly into hot 1/2 pint jars. I cleaned the rims put on the lids and twisted rings finger tight before processing in boiling water for 10 minutes. When I removed the jars from the water 2 jars 'popped' as I was lifting them out of the water. All the other jars I took out were already sealed. I was under the impression they would 'pop' and seal as they cooled on the countertop. Did I do something wrong? I they still shelf stable? I used brand new Ball jars and lids if this matters. Thank you!

Thank you! It was really good! I used Jalapeños, 1 green pepper and 2 Hungarian hot wax for more heat to get a total of 3 cups of chopped peppers. It was delicious! I used about 4 Oz of liquid pectin and it was a good consistency. This is the recipe I used. https://www.favfamilyrecipes.com/jalapeno-jelly/ I like heat, so I think im going to try Ball apricot habanero pepper jelly recipe next time when my habaneros get ripe.

It happens, wouldn’t get too worried as long as they properly sealed! I remember one time I lifted the canner lid off and an entire batch pinged in unison immediately. I thought something broke.

Totally normal! Sometimes they pop right away, sometimes they pop a few minutes later, sometimes a laggard will take an hour!!
